Tips for lasting freshness

If you prefer to refrigerate them, they will keep longer. If you choose to wash them, simply use water to rinse off the shell; do not use soap. Otherwise, you can safely store your unwashed eggs on your kitchen counter for weeks without issue, thanks to their natural protective coating, known as the "bloom." Some people will use a "water glassing" method to preserve eggs for months to years in a pickling lime and water mixture.

Safe handling of unpasteurized eggs

When using unwashed, unpasteurized eggs from our chickens, the most important thing to know is to beware of rotten eggs. While the risk is low, it is possible. Always check your egg for a strange appearance or a weird smell before consuming it. If either is present, it's best not to eat it. Some eggs may have a strange appearance which is OK. Otherwise, a quick rinse with water is all that's needed before you enjoy your fresh egg.
